“Rainbow Cake” … The perfect recipe !

The perfect “Rainbow cake”, kids love it, adults love it as well (if not more) … and each time the same “woww” when the first piece of the cake is cut and served !
This cake is always a little magic, no matter how many times I’ve done it, it’s one of those cakes that never gets boring… it’s always a pleasure (and to be honest a little anxiety) to wait to see if the colors stand out perfectly !

And besides being quite nice to look at … it’s also the one which my friends and family devour the faster! (Make them wait to take a picture is almost a torture !)

I already did this cake several times and corrected the recipe several times as well until I was completely happy with it, and now it’s close to perfect … so I thought it was a bit selfish to keep it to myself !

I hope that this recipe will bring you as much memory it brought us!

Ingredients:

(For the Cake)

  • 350g unsalted butter (at room temperature)
  • 350g white sugar
  • 6 eggs
  • 350g cake flour
  • 3 teaspoons Baking powder
  • A pinch of salt
  • 1 tablespoon vanilla extract
  • 1 tablespoon milk
  • Icing colors gel (Pink, Orange, Yellow, Green et Blue)

Instructions for the cake :

1# Preheat oven to 180°c (350°F)

2# In a bowl, cream the sugar with the butter until it’s white and fluffy.

3# Slowly add the eggs, stir well. Set aside.

4# In an other bowl combine the dry ingredients (flour, baking powder and salt)… Add slowly to the eggs-sugar-butter mixture and stir well until it’s fully combined.

5# Slowly add the vanilla and the milk and stir well.

6# Divide the batter equally in six separate bowls and add the coloring gel.

7# Bake the rainbow layers in separate pans for 15 minutes until a cake tester (or a knife) comes out clean when inserted into the center…Let it cool down and it’s time to make the meringue icing !

DSC_0789-1 Ingredients for the icing:

  • 5 egg whites
  • 210g  sugar
  • 3 teaspoons vanilla sugar

Instructions for the Meringue frosting :

1# Mix egg whites and sugar in a heat-proof bowl over a saucepan of simmering water. Whisk with a hand whisk continuously until the mixture reaches 65°C (149F). Remove from heat.

2# Start whipping the egg whites with a hand mixer until it becomes fluffy and white and the bowl is cool, (about 10 minutes.)

Assembly :

1# Place your first layer (darker blue) on a clean cake plate, spread a thin layer of meringue on top and repeat the same thing between each color. Chill the cake for 20minutes…

2# Place a generous scoop of frosting on top of the cake, spread evenly with a small palette knife and working your way down the sides until you have a thin layer of frosting over the entire cake. Chill for 20 minutes.

3# Remove from refrigerator and cover cake with a final layer of frosting. Then you can add as many Sprinkles as you want !

You’re done !
